1large eggplant
1large Tomato
1large Spanish onion
6 fresh mushrooms
2 T oil
2 cloves of fresh garlic
2 T sugar
A little Black Pepper
A little onion powder
1 T ketchup
10 pitted olives

Directions:
Directions:
Chop up finely the eggplant ,(Optional ..with peel )

Heat oil in Large Non Stick Frying Pan
put in eggplant and onions
Keep flame High until bubbles and then keep covered for about 10 minutes on a medium flame
Now add the rest of the Ingredients and keep on medium flame for another 10 minutes
Use a hand Blender to blend all ingredients together .
now let it simmer for another 5 Min and cool off and put in Plastic container and put it in fridge.

ENJOY!!!!

If you like it with chunky pieces then don't Blend for long .
