3 lbs. beef sirloin tip (or other stew meat) cut into 1/2 inch pieces
1/2 lb sage or sweet Italian sausage, casing removed
1 large onion, finely chopped
5 cloves finely chopped garlic
12 oz pitted prunes
1 can (14 oz) beef broth
3 cups water
15 oz can tomato sauce
3 tbsp chili powder
1tsp ground red pepper
2 tbsp ground cumin
1 tbsp paprika
1 tsp dried oregano leaves
1/2 tsp salt
for garnishes: shredded jack cheese, sliced green onion, diced tomatoes and sour cream.

Directions:
In 5-6 quart dutch oven, saute half of beef and half of sausages until well browned; remove to bowl. Repeat with remaining beef and sausage.

In same dutch oven, saute onion and garlic in meat drippings until golden. Stir in prunes and broth; heat mixture to boiling, stirring to loosen browned-on bits. Stir in meat and sausage, water, tomato sauce and seasonings.

Heat chili to boiling over high heat. Reduce heat, cover and simmer 2 hours stirring occasionally until beef is meltdown tender!

Serve with garnishes.
