Pastry for 9-inch pie crust (see Never Fail Pie Crust recipe)
1 1/2 cup sugar
1/3 cup flour
4 1/2 cups rhubarb cut into approx 1/2 inch pieces
2 tbsp butter or margarine

Directions:
Directions:
Heat oven to 425º. Prepare pastry. Stir together sugar and flour. Put half the rhubarb into pastry-lined pie pan; sprinkle with half the sugar mixture. Repeat with remaining rhubarb; dot with butter. Cover with top crust which has slits cut in it; seal and flute.

Bake 40 to 50 minutes or until crust is brown and juice begins to bubble through slits in crust..

Personally I prefer to mix the rhubarb with the sugar mixture in a bowl before putting any into the pie crust! And I sometimes substitute half of the flour with corn starch.

Variation: Substitute sliced fresh strawberries for half the rhubarb and use the lesser amount of sugar.
