2 lb. Pork Loin (for family size) Use 1 lb. Pork Loin for couple size.
Salt
Pepper
Thyme

1/4 cup blackberry jam
1 tbsp. Dijon mustard
1 tbsp. raspberry balsamic vinegar

Directions:
Directions:
Season pork loin by lightly sprinkling salt, pepper, and thyme on fat side of loin. Place in foil pan.

In a small bowl, combine blackberry jam, Dijon mustard, and raspberry balsamic vinegar. Brush loin with blackberry mixture.

Pour remaining sauce into a miniature bread loaf pan. Cover cupcake tin with foil.

Preheat oven to 350 degrees. Place a meat thermometer in deepest part of pork loin. Bake until thermometer reaches 140 degrees. Tent with foil until serving. Temperature will rise while sitting. Remove foil from blackberry sauce and use as dipping sauce or drizzle over baked pork loin. Can add dipping sauce to meat drippings for added flavor.
