1 lb. whole wheat spaghetti
1/4 to 1/3 c. chunky peanut butter
2 T. honey
1/4 c. warm water
1/4 c. tamari or soy sauce
1 grated garlic clove
Juice of 2 limes
1 T. hot sauce
3 T. vegetable oil
handful of shredded carrots
4 scallions, thinly sliced on an angle
1/2 sack spinach
1/4 c. chopped peanuts
2 T. fresh chopped cilantro
2 c. shredded chicken breast

Directions:
Directions:
Bring a large pot of water to boil. Salt the water and add the pasta to cook al dente. Drain and rinse to cool.

While the water is coming to boil. Heat peanut butter in the microwave to soften, about 30 seconds. Whisk the softened peanut butter with the honey and warm water in a large bowl. Whisk in tamari, garlic, lime juice and hot sauce. Add the oil in a steady stream, whisking constantly. Add the noodles to the dressing and toss until the sauce coats the noodles evenly. Add the vegetables and chopped nuts, toss to distribute the ingredients. Serve the noodles in bowls and top with cilantro and shredded chicken.
