4 lbs sugar
16 cups pitted apricots
2 1/2 Tbsp lemon juice
1 Tbsp cinnamon
1 tsp nutmeg

Directions:
Directions:
Puree pitted apricots four cups at a time in food processor. Place in large pot. Add sugar and stir. Taste for desired sweetness. For a tarter syrup add less sugar. Add lemon juice, cinnamon and nutmeg. Bring to a boil. Once boiling cook for one minute. Immediately add to prepared canning jars.
