4 c cubed watermelon rind
4T salt
1 gal water
4 c sugar
1/2 c corn syrup
3T lemon juice
1/2 tsp grated fresh or powdered ginger
1 pkg pectin

Directions:
To prepare your watermelon rind, scrape off as much pink as you can get, a thin layer is fine. Cut into long strips. Peel off dark green thin layer. Cube into 1 in cubes. Soak in 1 gal water and 4 T salt 6 hours or overnight. Drain and rinse. Puree rind in food processor and return to clean pot. Add sugar, corn syrup, lemon juice, and ginger. Bring to a simmer and cook 15 minutes. Add pectin, stir in and cook 1 minute. Careful not to overcook or you'll destroy the pectin. Immediately pour into prepared canning jars and can as any other jelly or into fridge jam containers and let cool.

This is a super yummy jelly but it is a solo flavor. It doesn't like to compete with other flavors such as peanut butter but is marvelous alone or with butter.
