1 15 oz. can black beans (rinsed & drained)
2 14 1/2 oz. cans Milder Rotel green chilies & tomatoes
2 c. cold water
1 tbsp vinegar
1 tsp. salt
1/2 tsp. black pepper
1 tsp ground cumin
1 tsp. dried thyme
1/2 tsp. crushed pepper only (if you like real hot)
1 c. chopped onion
1 c. chopped green pepper
1 c. chopped celery
2 tsp. chopped garlic
1 c. rice

Dump all the ingredients into a big pot. Bring to a boil. Reduce heat & allow to simmer 20 min. Allow to rest 5 min.
Garnish with grated cheese. *Healthy, quick, easy and Good.
