2 lbs. yellow squash, sliced
1 cup water
2 small onions, minced
2 tbsp. butter, melted
1 1/2 cups (6 oz.) shredded Cheddar cheese
1 1/4 cups round buttery cracker crumbs, divided
1/4 tsp. salt
1/4 tsp. pepper
4 slices bacon, cooked and crumbled
2 large eggs, lightly beaten

Directions:

1. Combine squash and water in a large saucepan; bring to a boil. Cover, reduce heat, and simmer 15 minutes or until squash is tender. Drain well, and mash. Drain again, and set aside.
2. Saute onion in butter in a large skillet over medium-high heat until tender. Combine squash, onion, cheese, 3/4 cup cracker crumbs, salt, and remaining 3 ingredients; stir well.
3. Spoon mixture into a lightly greased 2 quart casserole dish; sprinkle with remaining 1/2 cup cracker crumbs.
4. Bake uncovered at 350º for 40 to 45 minutes or until thoroughly heated.
