1 1/4 cups all-purpose flour
2 tbsp. sugar
2 tsp. baking powder
1/2 tsp baking soda
3/4 tsp. salt
1 large egg, lightly beaten
1 1/4 cups buttermilk
3 tbsp. vegetable oil
1 cup chopped pecans, toasted (optional)

Directions:
Directions:
1. Stir together first 5 ingredients in a large bowl; make a well in center of mixture.
2. Stir together egg, buttermilk, and oil; add to dry ingredients, stirring just until moistened. Add pecans.
3. For each pancake, pour about 1/4 cup batter onto a hot, lightly greased griddle.
4. Cook pancakes until tops are covered with bubbles and edges look cooked; turn and cook other side.
