Cut up chicken
vegetable oil
self-rising flour
salt & pepper

Wash chicken and lightly pat dry (chicken needs to be slightly damp); heat vegetable oil, deep enough to completely cover chicken, in a deep frying pan; season chicken, and dredge in flour; put in hot oil, medium high heat; cook about 20 minutes or until done. Don't overcrowd chicken in pan!

This recipe originally came from Mimi. The secret to this fried chicken, I am told by Mother, is using "self-rising flour", and not putting the chicken in until the oil is hot enough. Test oil by dropping a few sprinkles of flour in it and see if it bubbles.
VERY IMPORTANT NOTE: Don't leave eating the crusty skin of the chicken until last, because if you turn your head, it won't be there!!
