1 can of croissants
1 egg
1 Tbsp water
1/3 cup dried cherries (softened)
1/4 cup toasted pecans (chopped)
1/4 cup honey
1/2 tsp rosemary leaves (chopped)
1 brie cheese round

Directions:
Directions:
Heat oven to 400º. Open croissant and make a square on a lightly floured surface.

Place cherries in small bowl with hot water for 5 minutes to soften.

Stir softened cherries, pecans, honey and rosemary in a small bowl. Spread the cherry mixture in the center of pastry square. Top with cheese round.

Brush the edges of the pastry with the egg/water mixture. Fold croissant over cheese until cheese is covered. Place brie (seam side down) on baking sheet. Brush with egg/water mixture.

Bake for 20 - 25 minutes. Serve with crackers or just eat plain.
