2 tbsp. all-purpose flour
1 tsp. salt
1/4 tsp. pepper
4 skinned and boned chicken breast halves
2 tbsp. butter, melted
1 tbsp. olive oil
1 cup champagne or dry white wine
1/2 cup sliced fresh mushrooms
1/2 cup whipping cream

Directions:

1. Combine flour, salt, and pepper in a shallow dish. Dredge chicken in flour mixture.
2. Heat butter and oil in a large skillet; add chicken, and saute 3 to 4 minutes on each side.
3. Add champagne; cook over medium heat about 12 minutes or until chicken is done. Remove chicken and set aside.
4. Add mushrooms to skillet and saute 1 to 2 minutes.
5. Add whipping cream to skillet; cook over medium heat, stirring constantly, just until thickened.
6. Add chicken, and cook until thoroughly heated.
