1 32 oz. can chicken broth
1 1/3 cups uncooked quick cooking grits
1/2 cup butter
1 medium onion, chopped
2 jalapeno peppers, seeded and diced
1 large red or green pepper, chopped
2 garlic cloves, pressed
2 cups (8 oz.) shredded sharp cheddar cheese
2 cups (8 oz.) shredded Monterey Jack cheese
3 - 4 eggs slightly beaten
1/4 tsp. salt

Directions:

1. Bring broth to a boil in a large pot.
2. Stir in grits.
3. Reduce heat and simmer, stirring ocassionally for about 5 minutes. Cover.
4. Melt butter in a large skillet.
5. Add onion and next 3 ingredients.
6. Saute until tender.
7. Stir in grits and remaining ingredients.
8. Pour in a lightly greased 9 x 13 baking dish
9. Bake covered at 350º for 45 minutes or until set.
10. Serve immediately.
