5 pounds port butt or pork tenderloin
1 large onion chopped
2 tablespoons crushed red pepper (liquid not dried)
˝ cup minced garlic
2 teaspoons salt
1 tablespoon paprika
2 bay leaves
˝ teaspoon cumin
˝ teaspoon cinnamon
1 cup red wine
1 cup white wine
1 tablespoon vinegar
2 cups water

Directions:

Cut meat into 1” cubes. Add all ingredients together and cook in either a crockpot on high for 6 – 8 hours or in a pressure cooker for 45 minutes. Check liquid level occasionally so it doesn’t dry out. Add 1 cup of water at a time as needed.
