Melt some butter (one stick to start) and set aside. Peel four or five potatoes and cut into quarters or less and set aside. Peel one small onion and cut into small pieces and set aside. Start with two cups of flour and beat in two eggs and adjust flour or eggs until the dough becomes stiff. It may require a fair amount of flour if it dough is wet and sticky or another egg or part of one if dough becomes dry and breaks apart. The object is to get a dough that is stiff but will still roll out thin (approximately 1/4" thick or less). You will need to work the dough with a rolling pin until thin. Add sufficient flour to rolling pin and rolling surface so the dough does not stick to either. Take butter and brush onto the upside surface of the dough. Roll dough with fingers until entire dough is in a roll and then cut into pieces about 1 inch long. Place dough, onion, potatoes, and enough water to fill a large pan to about half of the height of dumplings. Place burner on medium allow it to slowly come to a boil. Reduce heat and cook until onions and potatoes are thoroughly cooked.

I have heard that another variation might be to use only the egg yolks but I have not tried that. Kind of messy but when you get them right, they are good. Not exactly something to build a diet around.
