Ingredients: 4 slices ono (3/4-inch thick, 6-7 ounces each) or mahi, tuna, etc. 5 tbsp. butter flour salt & pepper 2 ripe bananas 2 tbsp. hazelnuts, chopped 2 tbsp. gold raisins 11 tsp. paprika 2 c. milk 1 tbsp. sugar 1/2 c. mild mustard juice of 1/2 lemon sprinkling of tabasco 1 c. white wine (optional) 2 tsp. parsley, chopped

Directions:Preheat oven to 325 degrees. Coat bottom of baking pan with some of butter. Dust fish pieces lightly with flour seasoned with the salt & pepper, then lay fish in the pan. Peel bananas & slice diagonally and lay them over fish (1/2 banana on each piece of fish). Sprinkle nuts & raisins on top of the bananas and dot everything with flecks of butter (about 1 to 1 1/2 tbsp.. total).
Melt remaining butter (2 to 2 1/2 tbsp.) in a pan, add paprika and saute quickly before adding 2 to 2 1/2 tbsp. flour. Stir briskly to make a smooth ball. Slowly add milk, stirring constantly until it is well blended. Add sugar, mustard, lemon juice and tabasco. Boil the mixture down until it is thick. Pour the sauce over the fish in the pan. Pour wine over fish and in spaces between the fish. Sprinkle with parsley. Bake for 10-12 minutes. |

Notes: This is a recipe from my time on Kwajalein. Ono is a type of tuna. This recipe can be used with a variety of fish steaks. It is so delicious I am salivating as I type.
