2 pkg. frozen chopped spinach
4 Tbsp. butter
2 Tbsp. flour
2 Tbsp. chopped onion
1/2 C. evaporated milk
1/2 C. spinach liquor
1/2 tsp. black pepper
3/4 tsp. celery salt
3/4 tsp. garlic salt
6 ou. roll Jalepeno cheese
1 tsp. lea & perrins sauce
red pepper/tobasco

Cook spinach according to box directions; drain well and save 1/2 cup of liquid; melt butter in sauce pan over low heat; add flour, stirring until blended and smooth, but not brown; low heat and stirring important; add liquid slowly (milk & spinach liquid), stirring constantly; add seasonings and cheese, which has been cut into small pieces; stir until melted; combine with spinach; this may be served immediately or put into a casserole and topped with bread crumbs.
