4 med. tomatoes, sliced
1 cucumber, chopped
1/2 med. red onion, thinly sliced
1 c. Kalamata or other good Greek olives
4 oz. goat feta cheese, sliced in squares
4 T. olive oil
1 T. balsamic vinegar
1 tsp. parsley flakes (optional)

Directions:
Directions:
Slice tomatoes into 3/4-inch wedges. Slice cucumber into 1/2-inch slices, then cut each in half. Combine with thinly sliced onion and olives and toss. Place on salad plates, drizzle with oil and vinegar. Slice cheese into four to six squares and serve on top of salad. Sprinkle parsley on top of cheese, if desired. Makes 4-6 salads.
