3/4 cup cornstarch
1/2 cup flour, whole wheat
1/2 tsp spices, pepper, black
1 block tofu, firm, prepared with calcium sulfate and magnesium chloride (nigari)
2 tsp olive oil
3 tbsp chopped shallots, raw
1 1/2 tsp thyme, ground
4 cups mushrooms, raw
1 1/2 cup wine, Marsala
1 3/4 cup broth, vegetable, low sodium
2 1/2 tbsp tomato paste, Italian
4 cup spinach, raw

Preheat oven to 325ºF. Whisk cornstarch, whole wheat flour, and pepper in small dish. Remove tofu from package, pat dry.

Heat oil in a large skillet over medium-high heat. Dredge tofu slices in flour mixture, add to skillet and cook until golden, approx. 4 minutes per side. Repeat with remaining tofu and transfer to dish, cover to keep warm

Add shallots and thyme to skillet stirring constantly until shallots brown 2-3 minutes. Add mushrooms until tender 3-4 minutes. Stir in Marsala, simmer until slightly reduced, approx. 1 minute.

Whisk broth and tomato paste in small bowl, add to mushroom mixture and cook until it begins to thicken, about 2-3 minutes. Add spinach, cook an additional 3-4 minutes. Spoon sauce over tofu to serve. Bon appetito!
