1 cup onions, raw
1/2 tsp salt
1/4 tsp cumin seed
2 fl oz water
1/2 cup pepper, red, raw, chopped
1 1/4 4-5 oz tempeh
1/2 cup chopped onions, spring or scallions, raw
1 1/2 medium squash, zucchini, baby raw
2 tbsp soy sauce
3/4 cup mushrooms, raw
6 corn tortillas
1 pkg (12.3 oz) tofu, lite, firm, silken
3/4 cup water
1/4 cup Tahini
1 tbsp miso
1 tsp mustard, Dijon

Coat a non-stick skillet with cooking spray and saute' onion with salt for 5-6 minutes. Add cumin seeds, water, pepper, tempeh, scallions, corn, zucchini, mushrooms, miso, mustard, tofu, Tahini, and soy sauce. Cook 10 minutes until water has cooked off.

Cook tortillas to soften (in microwave wrapped in cloth towel for 3 minutes).
Preheat oven to 350ºF. Coat 9" round baking dish with cooking spray. Fill each tortilla with 1/2 cup filling and roll from one side to another. Place each one seam side down in the dish. Cover with tofu sauce and bake for 25 minutes.
