2 packages of bean sprouts
2 cups shredded cabbage
1 cup thinly sliced carrots
1/2 cup chopped onions
1 teaspoon chopped garlic
salt and pepper to taste
4 Tablespoons Extra virgin olive oil
Spring Roll Wrappers
1/2 cup vegetable oil
Optional: chopped cooked shrimp

Directions:
Directions:
Saute the onions and garlic with olive oil, then add remaining vegetables and cooked shrimp. Add salt and pepper. Cook for about 10 minutes.

Place mixture into Spring Roll Wrappers. Tuck in sides then roll up.

Fry in heated vegetable oil about 2 minutes per side.
