4 red potatoes, peeled and quartered
1 garlic bulb, roasted (see Misc.)
3 T finely shredded fresh basil
2 T unsalted butter
2 T olive oil
1/4 heavy cream or milk, plus more if needed
2 T freshly grated Parmesan cheese
Salt and freshly ground pepper to taste

Directions:
Directions:
In a medium saucepan, boil potatoes in lightly salted water for 20 minutes, or until tender when pierced with a fork. Drain and transfer the potatoes to a large bowl. Add roasted garlic, basil, butter, olive oil and 1/4 cup cream or milk and mash with a large fork, adding more cream or milk as needed to obtain the desired consistency. Fold in the Parmesan cheese and season with salt and pepper.
