2 tbsp grated ginger
2 small lemons, sliced
7 sprigs fresh thyme
6 halibut steaks (about 24 ounces)
1/2 tbsp olive oil
1/4 tsp freshly ground pepper
Optional: 1 cup cubed papaya, 1/2 cup cilantro leaves

Make marinade: stir together lemon juice, ginger, and pepper in a bowl. Cover in refrigerator for at least 2 hours.

Preheat oven to 425ºF. Place lemon slices on roasting or baking pan, all except 3 slices.

Place steaks on lemon and drizzle olive oil and marinade over fish. Squeeze remaining 3 slices of lemon over fish. Season with pepper, and papaya and cilantro if using.

Transfer to oven. Reduce temperature to 325ºF and roast until fish is cooked through, about 20 minutes.
