1/4 cup fresh whole grain bread crumbs
3 tbsp pine nuts, finely chopped
1 tbsp flat leaf (Italian) parsley, finely chopped
1/2 tsp lemon zest
1 tsp Old Bay seasoning
1/4 cup skim milk
4 (5 oz each) mahimahi filets, approx. 1" thick
1/4 tsp ground black pepper
Nonstick cooking spray (mist preferably), if a nonstick baking pan is not used

Directions:
Directions:
Heat oven to 450º and place a wire rack in a nonstick baking pan.
Stir breadcrumbs, nuts, parsley, lemon zest, and Old Bay seasoning.
Pour the milk into a shallow dish. Dip each filet in milk and then into nut and seasoning mixture. Press each filet gently so mixture adheres to the fish.
Place fillets in baking pan. Sprinkle evenly with pepper.

Bake until fish is opaque when tested with a knife and crust is just turning golden brown, approximately 10-13 minutes. Serve immediately.
