Ingredients: 1 1/4 cups chopped mushrooms 2 tsp olive oil 1 medium Spanish onion, chopped 1 large tomato or red pepper, chopped 8 sheets whole wheat phyllo dough 2 tbsp fresh oregano leaves or 1 tsp dried oregano 3 tbsp fresh basil or 2 tsp dried basil 1/2 cup light cheddar cheese 2 large whole eggs 4 large egg whites 1 1/2 cups 1% milk or light soy milk Pepper to taste

Directions:In a nonstick skillet heat olive oil over medium heat, then add mushrooms. Saute' for 6-7 minutes. Add onion, tomatoes, and pepper while stirring continuously for 4-5 minutes. Remove from heat.
Spray a 9x9-inch glass baking dish with nonstick spray or mist. Arrange 4 sheets phyllo dough and spread half of the vegetable mixture from the skillet over the bread. Sprinkle with 1/2 the basil, oregano and cheese mixture. Repeat layer with remaining ingredients.
Beat the eggs, egg whites and milk. Pour the egg mixture over phyllo dough and vegetables. Cover with plastic wrap and refrigerate for several hours. Bake strata in oven at 375º for 45 minutes or until golden and cooked through entirely. |
