2 eggs
2 tbsp honey
1/2 tbsp cinnamon
1 tsp vanilla
1/2 cup oat bran
1/2 cup white whole wheat flour
1 cup 1% milk
1 medium mashed banana

Yield: 6 thick rollie pollies
Serving Size: 1 rollie pollie

Beat the eggs and add liquid ingredients together. In a separate bowl mix the dry ingredients, then combine wet and dry ingredients. When combined, add the mashed banana. Spray a frying pan or flat skillet with nonstick spray and heat the pan over medium heat, then add 1/4 cup of the mixture at a time. After the first rollie pollie is done, reduce the pan to low heat and cook for about a minute. Flip the rollie pollie over and cook until golden brown. Remove from skillet and roll.
Optional: lightly spread light butter over rollie pollie and dust with confectionary sugar.
