1 cup extra-virgin olive oil, preferably Italian
Juice of 2 lemons
3 cloves garlic, minced
1 1/2 teaspoons flaky sea salt
1/8 teaspoon freshly ground black pepper
2 heads radicchio, separated into leaves
1/4 cup finely grated Pecorino Romano
1 teaspoon finely grated lemon zest

Prepare grill (moderately high heat).

In medium bowl, whisk together olive oil, lemon juice, garlic, salt, and pepper. Generously brush each radicchio leaf on both sides with dressing, stacking leaves as brushed in large bowl and reserving remaining dressing.

Working in batches, grill leaves until browned and somewhat wilted, about 30 seconds per side. Transfer as done to serving bowl.

Using chef's knife, slice grilled leaves in bowl into approximately 1-inch-wide strips. Drizzle remaining dressing over and sprinkle with Pecorino and lemon zest. Toss well. If desired, add additional sea salt to taste. Serve immediately.
