A spectacular dessert; a little goes a long way.
4 T sweet butter
5 eggs;
1 cup granulated sugar;
1.5 tsps unflavored gelatin (such as Knox);
¾ cup amaretti cookies, crushed, divided;
1.5 T Amaretto liqueur;
1.5 cups heavy cream, chilled.

Melt butter in top part of double boiler over simmering water.
In a bowl, beat eggs with sugar and and add gelatin. Add in melted butter and cook, stirring constantly, until thickened, about 6-8 minutes. Remove from heat.
Add ½ cup of crushed amaretti and the Amaretto; blend well. Cool, then refrigerate until mixture just begins to set.
Whip cream into soft peaks. Gently fold into Amaretto mixture. Spoon into individual glasses/bowls or into one serving bowl. Chill until set, about 4 hrs. Just before serving, sprinkle top with remaining crushed amaretti.
