2 tbsp. butter
1/2 c. brown sugar
4 c. pineapple slices
1/3 c. Crisco
1/2 tsp. grated lemon peel
as many cherries as pineapple slices
1 1/4 c. sifted all purpose flour
1/2 c. sugar
2 tsp. baking powder
1/4 c. pineapple syrup
1/2 tsp. salt
1 egg

Melt butter in an 8x8x2 inch iron frying pan over low heat. Arrange fruit over bottom of pan. Stir Crisco to soften in a large bowl. Sift all dry ingredients into the bowl. Then add the syrup, lemon peel, and egg. Mix until the flour is dampened. Then, using an electric mixer, beat for 2 minutes. Pour batter over the fruit. Bake at 350º for 30-35 minutes, or until golden brown. Let stand for 10 minutes, then invert cake onto a cake plate.
