Eggplant: 2 large eggplants (about 2-1/2 lbs.) Salt 1/2 cup butter or margarine, melted
Cream Sauce: 2 tbsp. butter or margarine 2 tbsp. flour Dash salt and pepper 2 cups milk 2 eggs
1/2 cup Parmesan cheese, grated 1/2 cup Cheddar cheese, grated

Directions:Meat Sauce: Saute meat, onion and garlic in butter until brown, about 10 minutes. Add herbs, spices and tomato sauce and bring to a boil, stirring. Reduce heat, simmer uncovered 1/2 hour.
Halve unpared eggplant lengthwise, then slice crosswise into 1/2" pieces. Place in broiler pan, sprinkle lightly with salt, brush lightly with melted butter. Broil 4 inches from heat, 4 minutes per side or until golden.
Cream Sauce: In medium saucepan, melt butter. Stir in flour, salt, and pepper. Add milk gradually. Bring to a boil, stirring constantly until mixture is thickened. Remove from heat. In small bowl, beat eggs, then beat in hot cream sauce mixture and return mix to saucepan. Mix well and set aside.
Preheat oven to 350º.
Casserole: In a shallow 2-quart baking dish, layer 1/2 of eggplant, overlapping slightly. Sprinkle each with 2 tablespoons grated Parmesan and Cheddar cheese. Stir bread crumbs into meat sauce and spoon meat sauce evenly over eggplant. Layer rest of eggplant slices, overlapping as before. Pour cream sauce all over. Sprinkle top with remaining cheese. Bake 35-40 minutes or until golden brown and top is set. If desired, brown top one minute under broiler. Cool slightly before cutting into 12 squares. |
