1/2 tsp. cinnamon (optional)
2 c. all-purpose flour
2 Tbsp. sugar
2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
2 eggs (slightly beaten)
2 c. buttermilk
1/4 c. melted butter
1/2 tsp. vanilla (optional)
1/2 c. milk

Directions:
Directions:
In a large bowl, combine dry ingredients. In another bowl, lightly beat liquid ingredients. Add the liquid mixture to the dry ingredients, all at once, stirring just to blend. The batter should be slightly lumpy. Heat lightly oiled griddle over medium/high heat. Pour 1/4 c. of batter onto hot griddle. When bubbles cover surface of pancakes and their undersides are lightly browned, turn over and cook the other side until brown.
