Small fryer chicken (1/2 per person)
Salt (to taste)
Pepper (to taste)
Olive oil
Olives, 1/2 can to each 1/2 chicken
Garlic, 1 small pod to each 1/2 chicken
1 tsp. lemon zest

Directions:
Directions:
About 2 hours before cooking, salt and pepper chicken and rub with olive oil. Chop olives and garlic and soak in some olive oil.

Brown top of chicken under broiler before baking. Fill rib sections with olives and garlic and wrap each half in foil. Bake at 350º for 1 1/2 hours. Lower heat to 325º the last half hour and remove foil.
