6 cups fruit such as peaches, blackberries, blueberries, apples, etc. (not strawberries as they are too watery)
4 tsp. cornstarch
1 cup sugar
1 tsp. vanilla extract
2 tsp. freshly ground nutmeg
2 tsp. freshly ground ginger

BISCUIT:

1 cup butter
1 cup sugar
1 egg
1 tsp. real vanilla extract
1 cup flour
2 tsp. baking powder
4 tsp. salt

Vanilla ice cream

Directions:
Directions:
Cream butter and 1 cup sugar; add egg and vanilla. Combine flour, baking powder, salt,
and fold into butter mixture until just combined. Mix fruit with cornstarch, 1 cup sugar,
almond extract, nutmeg and ginger. Pour fruit into a Pam-sprayed 9x13" baking dish (or
two 8" square pans) and drop batter onto fruit by heaping spoonfuls. Bake at 375° until
golden brown (45 min.). Serve cobbler warm with vanilla ice cream.
