1/4 lb. salt pork, diced
4 c. potatoes, cut in small pieces
2 lbs. fish fillets (cusk, haddock, cod)
1/4 tsp. pepper
1 tall can evaporated milk
2 onions, sliced and diced
2 c. water
1 tsp. salt
1/4 tsp. Lawry salt
2 c. light cream

Directions:
Directions:
Fry diced salt pork slowly in the bottom of a heavy kettle until golden colored. Remove pork scraps and set aside. There should be about 3 Tbls of fat left in the kettle. Add the onions and cook until yellowed, but not brown.

Add potatoes and enough water so it comes nearly to the top of the potatoes. Place fish on top of potatoes and sprinkle with seasonings. Cover, bring to a boil, then cook on low heat until potatoes are tender and the fish "flakes."

Pour in both kinds of milk and allow to heat thoroughly but do not boil. If necessary, stir very gently so as not to 'mush' the fish.
