4-2/3 cups (1.15 L) potatoes, sliced
1 cup (250 mL) ham, diced
1 cup (250 mL) mushrooms
2 cloves garlic
1/2 onions
1/2 cup (125 mL) chicken stock
1/2 cup (125 mL) milk
1/2 cup (125 mL) Parmesan cheese, shredded or grated
1 cup (250 mL) Cheddar cheese, grated
1/4 cup (50 mL) olive oil
1 tsp.black pepper

Preheat oven to 350ºF. Wash and slice potatoes 1/4-in thick. (Be sure to remove any roots, eyes, blemishes, etc. before slicing.) Dice ham. In food processor or blender, puree mushrooms, garlic, onions, stock, milk, olive oil and pepper. Lightly oil a 9"x9" casserole or baking dish. Place a layer of potato slices in dish, spread puree over top to cover, add approximately 1/4 cup of diced ham and sprinkle 2-3 tbsp each of parmesan and cheddar cheese over top. Repeat until all of the potatoes are used. Pour any remaining puree and cheese over potatoes. Cover with lid or foil, and bake for 45 minutes. Remove lid, bake another 10 minutes. Let stand 5-10 minutes before serving. Sprinkle with chopped parsley and/or green onions, if desired.
