6 c fresh corn (from about 7 large ears of corn),
1 12 oz bag of cole slaw mix,
1 red bell pepper, cored, seeded, and med diced,
1 c sliced scallions,
1 can black olives (16 oz) drained and sliced,
6 Tbsp chopped fresh cilantro
3/4 c extra virgin olive oil,
Juice of 2 large limes,
1 1/2 tsp Old Bay or other Maryland style spice,
Salt and freshly ground pepper

Mix all ingredients in a large bowl. If there is time, let salad stand for a few minutes to allow flavors to blend, then serve.

You don't even have to cook the corn to make this salad. Simply cut it off the cob and toss it with the cole slaw mix. The dressing is simply a drizzling of olive oil and lime juice. Good with the Grown Up Sloppy Joe's recipe, also included.
