CAKE BASE
3 Eggs
1 C. Sugar
2/3 C. Pumpkin
1 Tsp. Lemon Juice
¾ C. Flour
1 Tsp. Baking Soda
1 Tsp. Ginger
2 Tsp. Cinnamon
½ Tsp. Nutmeg
½ Tsp. Salt
(Nuts are optional)


Filling Mix
1 C. Powdered Sugar
2 3 oz pkgs of Cream Cheese
½ C. Butter (1 stick)
½ Tsp. Vanilla

CAKE BASE
Beat Eggs at high speed for 5 minutes. Gradually add sugar. Stir in pumpkin and lemon juice. Set aside. Stir together flour, baking soda, salt and spices. Fold into pumpkin roll mixture (previously made). Spread in greased and floured 15” x 10” baking pan. Sprinkle with nuts if desired. Bake at 375º for 15 minutes. Turn out of pan on to a towel floured with powdered sugar. Brush powdered sugar on top of cake. Start at short end and roll cake with the towel. Let cool.


FILLING MIX
Mix the Cream Cheese, Butter, and Vanilla until smooth. Add powdered sugar. Unroll the cake and spread the topping over the cake. Re-roll and chill. Slice to serve.
