6 Peeled cut potatoes
1 Small diced onion
1 tsp. Baking powder
3 Eggs
1 tsp. Salt (or more to taste)
2 Tbl. Flour
1 tsp. Pepper
1 Tbl. Parsley flakes

Directions:
Directions:
Put in blender or food processor until smooth. It's okay if there are some small pieces of potato. Heat oiled skillet and pour into pan. (Just like a pancake). Cook until the batter bubbles then flip. They are done when they are golden brown like a hash brown. You can then transfer them onto a cookie sheet that is lined with a layer of paper towels then pancakes then a layer of towels and pancakes. Keep them warm in a 200º oven until ready to serve. These go great with any kind of roast or beef dish. They can be served with apple sauce, sour cream or even gravy. I like to have one with each topping.
