Ingredients: 1 c. graham cracker crumbs 1 tbsp. powdered sugar 3 tbsp. butter, melted 6 egg yolks 2 (14 oz.) cans sweetened condensed milk 1 c. fresh lemon juice 1 c. freshly whipped cream 2 tbsp. powdered sugar Garnishes: lemon slices & fresh mint leaves

Directions:1. Preheat oven to 350º. Stir together graham cracker crumbs and powdered sugar. Add butter until blended. Press mixture on the bottom and up the sides of a 9-inch deep-dish pie plate or a regular 10-inch pie plate. Bake 10 minutes. Let cool completely on a wire rack for about 30 minutes. 2. Whisk together egg yolks, sweetened condensed milk, and lemon juice. Pour into the prepared crust. 3. Bake at 350º for 15 minutes. Let cool completely on a wire rack for about an hour. Cover and chill for 4 hours. 4. Beat whipping cream at high speed with an electric mixer until foamy; gradually add powdered sugar, beating until soft peaks form; dollop over chilled pie and garnish. |

Notes: Granny would make this pie for Grandad in the summer. He would come in from the heat of the oil field at Hulldale, north of Eldorado, and take his bath. When he was all cleaned up, Granny would have his cool pie and an ice water on the table. He and I would have a special opportunity to have dessert before supper!
