4 lbs. beef short ribs, bone in
1/2 tsp. salt
1/2 tsp. pepper
1 tbsp. olive oil
1 medium onion, diced
1/2 cup beef broth
1-1/2 cup dark beer
1 tbsp. brown sugar
1/2 tsp. thyme
2 cups baby carrots
1 can (8 oz.) mushrooms, sliced
2 tbsp. corn starch
1 tbsp. spicy mustard

Directions:
In browning pan on high heat, add olive oil, short ribs, salt, pepper. Cook for 5 minutes. Add onion, broth, beer, sugar, thyme. Bring to boil. Pour contents in slow cooker or roasting pan.

Slow cook on High for 5 hours or Low for 7 hours, or bake in oven at 375º for 3 hours.

After 1-1/2 hours, add carrots and mushrooms. To thicken, mix 1/4 cup beer and cornstarch and add to ingredients.

Serve over egg noodles.
