Souffle:
3 lbs. cooked carrots
9 eggs
1 c sugar
9 Tb flour
3 tsp baking powder
3 sticks melted butter
1 1/2 tsp cinnamon,

Topping:
3/4 c cornflake crumbs, (eliminate during Passover),
9 Tb brown sugar,
6 Tb butter-melted,
3/4 c chopped pecans or Emerald's Pecan Pie nuts (optional)

Directions:

Souffle:
Place all ingredients in cuisinart bowl, starting with the carrots
Blend until smooth
Pour into a 9x13 pyrex dish
Topping:
Mix all ingredients together and sprinkle over the top.
Bake @350 degrees for 1 hour.
