Olive oil, yellow onion, garlic cloves, tomato, zucchini, yellow squash, okra, egg plant, and just about any other vegetable, sunflower seeds, Parmesan cheese, pasta of choice, curry powder, sweet basil

Directions:
Directions:
in a large skillet simmer whole yellow onion sliced and garlic sliced in olive oil till golden brown uncovered, add all the veggies washed and sliced with curry and basil to taste, cover and cook till tender on low heat for a long time. Add a little pasta water from time to time to maintain a nice natural gravy. Prepare pasta, serve veggies on pasta topped with a sprinkle of sunflower seeds and grated Parmesan cheese.

unreal good dish, portions can be frozen and heated in the microwave. Any veggies will do but the okra adds a nice thick gravy and the tomatoes and green veggies produce a colorful dish.
