12 hard boiled eggs
1/2c Hellman's Light Mayonnaise or Miracle Whip
Chopped purple onion-small to medium
Little salt
Little white pepper
8 ou. reduced fat sour cream
4 ou. Black Lumpfish Caviar-Romanoff's, rinsed and drained well

Directions:
Directions:
Chop eggs and mix with mayo or miracle whip. Add salt ands pepper. Should be on the drier side
Spray a 3-4 c mold with Pam
Mold should have a flat bottom and straight sides
Put egg salad in mold and refrigerate for at least 1 hr. until firm
Use a butter knife to loosen around edges and ease out of mold onto serving plate
Makes it easier if you put the mold in warm water in sink for a few minutes before you unmold
Cover surface with chopped onion, then spread sour cream on top.. (This can be done earlier and put back in refrigerator covered in Saran wrap)
Before ready to serve, carefully spoon caviar on top
Serve with crackers

Egg salad can be made the day before and refrigerated in the mold. Have an extra jar of caviar on hand. Often have to add it to the top after people start eating it.
