1 3/4 cup granulated sugar
3 tbsp flour
1 tbsp grated lemon zest
3 large eggs
1 cup buttermilk, not light, full fat
1 tsp vanilla extract
1 stick butter, melted
1 unbaked 10 inch pie crust

Directions:
Directions:
Preheat oven to 400 degrees.
In a large mixing bowl, combine the sugar, flour, and lemon zest. Whisk in the eggs, 1 at a time. Stir in the buttermilk, melted butter, and vanilla. Pour the buttermilk mixture into the pie crust. Bake at 400 degrees for 15 minutes, then turn oven down to 325 degrees and bake 45 - 50 minutes longer. Remove from oven and cool at room temperature.

***Can dust the unbaked crust with a little flour inside to prevent a soggy crust in the middle. Depends on good air circulation in the oven, may not need to do this.
