9 inch pie crust, unbaked ( the frozen crust in the foil pan)
2 cups sugar
1/2 cup butter, melted
1/4 cup milk
1/3 cup lemon juice (use the same lemon for the zest)
2 tsp lemon zest (the "rind" grated)
2 tbsp cornmeal
1 tbsp flour
1 tbsp white vinegar
1/2 tsp vanilla extract
1/4 tsp salt
4 large eggs, slightly beaten ( use extra large)

Directions:
Directions:
Preheat oven to 350 degrees.
Stir together the sugar and next 9 ingredients until blended, then add the eggs, stirring well. Pour into unbaked pie crust.
Bake for anywhere from 45 to 55 minutes or until done. Start checking at around 35 minutes.
