1/4 cup butter
3/4 cup brown sugar
1 can (15 1/4 oz) pineapple slices (in heavy syrup)
marachino cherries
1/3 cup shortening
1 cup sugar
1 egg
1 1/2 cups flour
2 tsp baking powder
1/2 tsp salt
2/3 cup pinapple juice from can

Directions:
Directions:
Preheat oven to 350 degrees.
Melt butter in bottom of heavy 10 inch skillet (cast iron), add brown sugar and spread evenly in skillet. Arrange pineapple slices and place a cherry in the center of each slice.
Cream shortening and sugar until fluffy. Add eggs and beat well.
Sift together flour, baking powder, and salt. Add alternately with pineapple juice/syrup and blend well.
Pour over pineapple slices.
Bake for 45 minutes or until done. Turn out on serving plate while hot.
