Marinated Cucumbers and Onions Recipe

Ingredients: 8 regular size Cucumbers 2 large sweet Onions (may use red onions, for color) 1/4 cup salt 1 1/4 cup White Vinegar or White Wine Vinegar 3 cups water 2 teaspoons White Pepper 1 teaspoon Black Pepper 2 teaspoons Salt

Directions:Peel and slice cucumbers, 1/8 inch thick. Place in a large bowl. Then peel and slice onions and combine with cucumbers. Add cold water to cover. Add 1/4 cup salt and stir. Cover and place in refrigerator for a minimum of 4 hours and can be soaked over night. It takes out any bitterness from the cukes or the onions. While they are soaking, combine vinegar, salt and peppers and 3 cups of water and stir well and taste. Just season to taste and set aside. Now remove soaking cukes from the fridge and drain off ALL water. Then pour vinegar mixture over cukes and onions and stir well and refrigerate. There are many variations to this basic recipe |
