¼ c. Olive oil
1 Lg. Onion
2 Garlic cloves, minced
1 ¼ c. Long grain white rice
2 c. Beef broth or low salt chicken broth
½ c. White wine
2 - 10 oz. pkg. Fresh spinach leaves
1 c. Chopped seeded tomatoes
1 c. Crumbled feta cheese

Directions:
Directions:
Heat oil in heavy large pot over medium-high heat. Add onion and garlic and saute until onion is tender – 6 minutes. Add rice & stir until translucent, about 2 minutes. Add broth & wine and bring to boil. Reduce heat to low, cover and cook till rive is almost tender – 15 minutes. Mix in spinach. Cover and cook till rice and spinach are tender and all liquid is absorbed – 8 minutes. Mix in tomatoes and cheese. Season with salt and pepper.
