2-3 lbs. Chicken Thighs
3 c. Water
3 c. Chicken Broth
1 can Mushrooms
2 tbsp. Shredded Ginger
1 tsp. Salt
1 Clove Garlic, Minced
4 bundles Long Rice (soak till soft)
2 cubes Chicken Bouillon

Directions:
Directions:
1. Put chicken in soup pot and cover with water, and broth. Add ginger, salt, garlic, mush and bouillon. Bring to boil then simmer 45 mins.
2. Allow to cool and then bone and shred chicken
3. Reserve broth.
4. Cut long rice into strips and add to broth, boil for 15 mins.
5. Add chicken and serve hot.
